DO THIS
1. DUMP IT IN.
Put the beef, birria sauce, and broth in the slow cooker.
2. WALK AWAY.
Cook on LOW for approximately 8 hours or HIGH for 4–5 hours, until the beef shreds easily.
3. SHRED IT.
Pull the beef apart with two forks. Save the cooking liquid — that’s your dipping broth!
4. FILL + BAKE.
Heat oven to 425°F.
Microwave tortillas for 30 seconds to soften. Fill with beef and cheese, fold, and place on a lined baking sheet.
Lightly brush with (or use olive oil spray). Bake 10–15 minutes until crispy.
5. DIP + ENJOY.
Pour the warm cooking broth into bowls. Serve alongside the crispy tacos for dipping.
DONE.
ADHD-FRIENDLY TIP
- Too tired to bake? Warm the tortillas in the microwave, fill with beef and cheese, and serve.
- Make it ahead. Cook the beef today, refrigerate it with the broth, and assemble the tacos when you’re ready.
- Freeze the extras. Portion leftover beef with broth into freezer-safe containers for another low-spoons meal.
- Minimize cleanup. Line your baking sheet with parchment paper and use a dishwasher-safe slow-cooker insert.
